When we talk about the smoking process, you probably envision foods exposed to smoke in a closed environment, with controlled temperature and time. We can list bacon, provolone, salmon, sausages, and various cured meats to illustrate this process. And what do they have in common? They are all foods with a high content of animal fat, typically in solid state. (It is important to clarify that a high-fat content in the food is necessary for flavor fixation in the smoking process.)

So why not smoke a vegetable fat, considering that would be healthier alternative? The issue is that plant-based fats are commonly found in the form of oils, in liquid state.

Smoking a liquid is a challenge. The problem is that, following the conventional process, when using a container to contain the liquid itself, a large part of the contact surface with the smoke is lost, resulting in a slow process with little flavor intensity.

The solution adopted by almost all of the industry is chemical smoking, which consists of using flavorings that are added to the final product. This alternative is discarded by us as it is not aligned with the philosophy of Mirante Alquimias Gustativas.

Our decision, then, was to invest several years in research and development to create an original method of plant-based, natural, healthy, and conscious woodsmoking, which we named Alchemy #1.

Plant-based: by using only smoke from selected woods, we can manipulate it at different stages and promote the interaction with vegetable fats in liquid state. We can reach high intensity of flavor without the acrid and burnt smoke aftertaste.

Natural: the sensory experience of natural smoking is unique. The true flavor that wood brings is something that is ingrained in our DNA, since ancient times. It’s more than a taste, it’s a smell that arouses appetite and makes us salivate. This flavor, by the way, is something we’ve left behind just a few generations ago, when all meals were cooked over firewood.

Healthy: we manifest our technique in cold-pressed oils, always attentive to offering healthy products to our customers. Additionally, in our process, we prevent the smoke from coming into contact with the oils, thereby avoiding the addition of PAHs (polycyclic aromatic hydrocarbons, potentially carcinogenic) to the process while preserving the delicacy of the cold extraction (without exposure to heat, light, and air).

Conscious: it’s worth mentioning that it’s an environmentally conscious process. We use only 3 kg of wood per 100 liters of oil. And this wood can still be reused as charcoal, resulting in minimal impact.
